In Morocco, there is a custom to serve an abundance of different vegetable salads before a meal, each of them in small quantity. Usually, the salads themselves are simple but extremely original. The variety of flavours creates a favourable background for main courses and gives the guest an opportunity to choose the salads which he likes the most. In some countries, this kind of salad or appetizer is called "tapas"
